Chicken with Veggies

This has to be the easiest meal I have ever made. 4 ingredients and 1 hour 15 minutes cooking (at 400 degress) time. The Mr. even liked it! I would give this meal 4 out of 5 - I will kick it up a notch the next time. Let me know if you give it a try!

Here are some pictures - Since I am new at this the pictures are in verse order. If you want to see the final product - comment and I will add that photo later.

Hello World

Hi! I decided to start this blog as a response to an extended family member’s battle with cancer and Jamie Oliver’s “Food Revolution”. I want to start eating healthier and increase my fitness level. I also want this for the people I care about (really all people). To do this I am going to make a change with myself and hope it inspires others to try also. My poor husband doesn’t have a choice but not to eat what I cook! ☺

Here is my plan:
1. Cook more at home-making more natural food choice (evening meals)
• I am going to try to eat at home (me doing the cooking) 3 times a week with a goal of cooking 5 nights a week
• Eating a healthy breakfast daily
• Drinking more water
• Begin to cut out highly processed food
2. Add more exercise into my daily life
• Getting at least 30 min of exercise 5 days a week
• Add strength training and stretch to my workouts – balance is very important as we age and the more flexible we are the better off we will be
3. Share my cooking experiences or experiments with you

Let’s make a pact to not have “sucker” stamped on our foreheads by food manufacturers and buy foods that come from the farm instead of the factory as much as possible. Let’s eat less sugar and take out sugary drinks all together (don’t get me wrong there are times that a good cold Dr. Pepper is called for). I am talking about in our day-to-day eating not those specials occasions unless those special occasion are every day.

I love to eat and plan around food! This will be a challenge for me but I am game, as it will benefit me and those that I care about and work with!

I look forward to sharing this adventure with you and hope to hear from you as well!

Here’s to our health!

Debbie
